A new era has begun for Brighton-Le-Sands with the official unveiling of The Brighton Hotel Sydney – MGallery Collection, a 307-room bayside retreat set to transform the Botany Bay foreshore and re-establish the area as one of Sydney’s most compelling coastal destinations.
Part of Accor’s boutique MGallery Hotel Collection, the newly reimagined property blends resort-style leisure with city convenience, offering Mediterranean-inspired dining by acclaimed chef Peter Conistis, extensive wellness facilities, and 11 flexible event spaces — including two statement ballrooms.

The hotel aims to attract both leisure and business travellers, from holidaymakers and wedding parties to corporate conferences and events.


Design inspired by light, sea and local heritage
Interiors take cues from the shifting light of the bay and the laid-back rhythm of seaside living. Natural textures, calming palettes of seafoam and sand, and expansive glass facades invite the outdoors in, with rooms and suites featuring private balconies, many with sweeping water views.

The hotel’s design also nods to the Greek-Australian heritage of Brighton-Le-Sands, weaving the area’s cultural story into its architecture and dining.


A culinary destination in its own right
The hotel’s flagship restaurant, Ammos Brighton, sees Peter Conistis (one of Australia’s most celebrated Greek-Australian chefs) showcase contemporary Mediterranean flavours, including a standout reimagined moussaka with scallops and roasted eggplant. Coco’s on the Beach offers a relaxed beachfront atmosphere with casual bites, craft beers and live sport until late, while Sands Bar features sun-filled indoor-outdoor spaces perfect for cocktails, shared plates and private gatherings. A seasonal adults-only beach club will also debut this weekend, adding to the property’s social scene.


Wellness and events redefined
Guests can enjoy both indoor and outdoor pools, a light-filled fitness centre with Peloton bikes, sauna and steam rooms, and tranquil terraces designed for relaxation. Event planners will find 11 versatile venues, including the showpiece Brighton Ballroom: a sophisticated, light-drenched space for up to 600 guests with ocean views, sculptural chandeliers and customisable lighting. The property’s integrated approach makes it ideal for conferences, weddings and corporate retreats.
