Adina Hotels opens two new Sydney restaurants

Shoreline Kitchen in Adina Sydney Darling Harbour and Bar Benevento in Adina Sydney Town Hall offer a focus on locally connected experiences

TFE Hotels continues to reshape and elevate its homegrown Adina brand, with the launch of Shoreline Kitchen at the flagship Adina Sydney Darling Harbour and the arrival of Bar Benevento at Adina Sydney Town Hall, signalling a renewed focus on locally connected guest experiences.

The two restaurant openings form part of TFE Hotels’ more than $100 million investment in repositioning the Adina Hotels brand, enhancing accommodation, public spaces and food and beverage experiences across the portfolio.

Adina Sydney Darling Harbour’s multi-million-dollar transformation has repositioned the 114-room hotel 26 years after it opened ahead of the Sydney 2000 Olympics. Led by Bates Smart, the refurbishment encompasses the guest apartments, lobby, meetings and events spaces, pool area and the new 60-seat Shoreline Kitchen.

The all-day restaurant offers hotel guests, business travellers and Sydneysiders a relaxed new dining option between Darling Harbour, Barangaroo and the Sydney CBD. Timber, stone, brushed brass and soft textiles create a warm contemporary space connected to its harbourside location.

Helmed by Executive Chef Evan Prayogo, the menu draws on the sociable style of Mediterranean dining while placing seasonal Australian produce at its centre. Breakfast highlights include coconut chia pudding with yuzu, finger lime and toasted coconut, and Tasmanian smoked salmon on potato rösti.

As the sun dips, the menu evolves to Blue Swimmer Crab Mafaldine, Shoreline’s signature fish burger and a selection of larger plates designed to share.

Chef Evan and the Shoreline Kitchen also support the wider hotel experience, providing room service, poolside dining and catering for meetings and events.

The reimagining of Adina Sydney Darling Harbour builds on the transformation of Adina Chippendale Sydney in 2022 and the extensive refurbishment of the 144-key Adina Sydney Town Hall last year.

Together, the projects reflect Adina’s next chapter, introducing contemporary design, more welcoming social spaces and stronger connections to the neighbourhoods in which the hotels operate.

TFE Hotels’ Group Chief Operating Officer Chris Sedgwick said the evolution of Adina extends beyond its apartment style accommodation, with elevated food and beverage experiences playing an important role in creating hotels that appeal to travellers.

 

“Food and beverage are a key part of Adina Hotels’ evolution. We’re working with experienced hospitality operators to create venues that reflect the character of their location, serve local communities and add depth to the guest experience,” Mr Sedgwick said.

“As our first-generation hotels are repositioned through significant investment, we’re creating more contemporary, experience-led spaces where great accommodation and great dining go hand in hand.”

Adding to Adina Sydney Town Hall’s refreshed offering is Bar Benevento, a bustling southern Italian coffee and pasta bar located on the ground floor of the hotel at the corner of Kent and Bathurst streets. The venue brings together brothers Anthony and Julian Izzillo – the team behind Sydney’s longstanding de Vine Food and Wine – in partnership with café operator Kosta Papanikitas.

Named after the Campanian city where the Izzillo brothers’ father was born, Bar Benevento draws on the family’s
southern Italian heritage and the atmosphere of a neighbourhood alimentari.

Bar Benevento’s menu, overseen by Head Chef Tim Fisher, includes an oversized ricotta and egg-yolk breakfast
raviolo with Strega-infused hollandaise, savoury truffle mortadella cannoli, pasta specials, chicken cotoletta, and a
selection of stuzzichini, meats and cheeses.

Campania’s famed Strega liqueur is central to the Bar Benevento experience, appearing throughout its food and
cocktail menus. The drinks offering also includes aperitivo-style cocktails and a wine list spanning all 20 Italian
regions, with an emphasis on southern Italian wines and native Italian grape varieties grown in Australia.

Alongside new hotel openings, the recent refurbishments and venue launches demonstrate how Adina Hotels is
evolving for a new generation of travellers, combining apartment-style living with elevated design, experience-led spaces and food and beverage venues that bring guests closer to the local neighbourhood.

“Shoreline Kitchen’s contemporary Australian offering and Bar Benevento’s lively southern Italian concept
complement Adina’s more design-led direction, giving guests considered places to meet, dine and spend time
throughout their stay,” he said.
