Historic Old Clare re-opening in August
The redevelopment of Sydney’s historic Old Clare Hotel at Chippendale is expected to be finished in August.
Singapore hospitality group Unlisted Collection released plans for a 62-room boutique hotel with a rooftop open-air deck with a pool earlier this year. The hotel itself will also house a lounge, bar, day spa, private gym meeting space and three new restaurants.
The Old Clare Hotel will be merged with the Carlton United Brewery Administration Building and the design is by Tonkin Zuliakha Greer Architects in what director Tim Greer calls “a building of mixed emotions”, creating “a blend of historic and modern aesthetic — high ceilings, heritage timber paneling, exposed brick (from the original foundation), all brought together amongst a contemporary, semi-industrial design”.
British chef Jason Atherton’s first Australian venue, Kensington Street Social, Clayton Wells’ Automata, and Sam Miller’s Silvereye will be the restaurants.
Unlisted Collection is owned by Singaporean hotelier Loh Lik Peng. Launching its first boutique hotel, Hotel 1929, in Singapore in 2003, the company has since expanded to operate six hotel properties and 11 restaurants, located in Singapore, London and Shanghai. Properties include New Majestic Hotel and Wanderlust in Singapore, Town Hall Hotel and Apartments in London, and The Waterhouse in Shanghai.
