Palmero named Conference Centre Chef of the Year

Jason Palmero, executive chef MGSM Executive Conference Centre, Sydney captured the Australian position in the IACC-Australia qualifying cook-off and the right to represent Australia at the International Association of Conference Centres, tenth annual Copper Skillet Cooking Competition.

The event was held at The Grange at Cleveland Winery on 20 January.

Jason heads off to join the winning chefs from IACC chapters in Belgium, Canada, Denmark, Netherlands, Sweden, United Kingdom and the USA for the international competition at the IACC-Americas Annual Conference. The competition will take place at the Eaglewood Resort & Spa Chicago, Illinois in March to vie for the crown of the Global Conference Centre Chef of the Year.

The popular Copper Skillet competition was introduced in 2004 to highlight the artistry and skill of the best chefs from IACC-member conference centres around the world and to honour their contributions to the shared goal of providing an outstanding conference centre experience.

In his approach to cooking, chef Palmero uses local fresh ingredients with an emphasis on achieving a “wow” factor for conference guests through the use of flavours to awaken the taste buds.

Local judges George Hill and Bernd Uber were highly impressed with the standard of dishes presented which were evaluated on originality of the creation, technique, presentation, textures, balance of flavour combinations and hygiene standard of the work station.
