The resort’s Executive Chef, Ebony Baker, was crowned Chef of the Year – Accommodation Division, a testament to her exceptional culinary talent. Similarly, Justine Dorrell, the resort’s Talent & Culture Manager, was honoured for Excellence in Service – Accommodation Division, recognising her dedication to fostering a thriving team culture.
These accolades follow the pair’s earlier wins at the NSW Accommodation Australia Awards for Excellence, where Ebony secured Chef of the Year and Justine won Human Resources Talent of the Year.

Elements of Byron’s eco-conscious ethos extends to its thoughtful design and native rehabilitation efforts. The resort has preserved over 70 percent of its 24-hectare property, leaving critical ecologies undisturbed. During construction, more than 1250 mature trees were protected, and over 200,000 native plants were introduced to revitalise the land’s biodiversity.
The site, once degraded by farming and sand mining, now boasts flourishing ecosystems, including one of the largest privately owned examples of coastal littoral rainforest in New South Wales. Guests can explore this sanctuary through guided eco-tours led by Alastair Oakman, the resort’s in-house naturalist and grounds manager. From bush tucker tastings to wildlife spotting, these tours offer an immersive journey into the site’s ecological treasures.
